Nov 5 2016 Tomatillo

  I am so excited that both The Old Stone Brewery and Hot Belly Mamas, two great restaurants in Peterborough, are using our Tomatillo and trying out some recipes with our duck. It feels great growing food for people to enjoy!

Stuffed zuchinni

Our garden took a hard hit this year, it was so darn dry. All of our squash just didn't make it. My friend Alex gave me a beautiful Zucchini that was just perfect for stuffing, yay!
I cut it in half, length wise and cut out the seeds. I stuffed both halves with this mixture:  browned in a frying pan, ground turkey, onion, garlic, swiss chard, salt and pepper to taste, then add precooked brown rice and a can of cream of mushroom soup. So spoon this mixture into both halves, i wrap each half in foil and put on baking sheet in oven for about 45 min, then grate some cheese over, i used soft goat cheese and mozzarella, and bake with foil pack open to brown it for another 15 min. Let cool a few min then slice and serve.
The possibilities are endless, you can stuff many things, with many things.  I have made many variations, hamburger, rice and salsa, rice whatever's leftover meat (sausage, chicken) and whatever cream of soup). I usually freeze the half we don't eat, it does freeze well but the skin gets tough and pretty much inedible. And I don't cook the half that I freeze for as long, perhaps only about half an hour and cool it down before putting in the freezer.

Aug 15 2016

It is such a great feeling preparing and eating food you grow yourself. I always feel somewhat jubilant when everything other than the salt, pepper and butter (no I don't regularly make our own) was grown here, or local. Tonight our dinner was such, one of our gorgeous non gmo chickens, seasoned with salt, pepper and garlic, in a roasting pan with a bit of water, at 300 degrees C for about 2 hrs for a 3.5lb bird. The last 45 min I added in some of our baby blue potatoes and basted the bird. I had picked some swiss chard so just boiled it in a bit of water and salt for a few min. This was also my first trial of the Cucutz squash. The one I picked was approx 2 inch diameter at its widest  but around 2.5 feet long.  I treated it the same way as the chard, sliced it into chunks and just a breif boil in lightly salted water. The skin was a little bitter so next time I will likely peel.To serve I drizzled the reduced pan juice over the chicken, and just butter, salt and pepper over the potato and veg. Simple but amazing! Cucutz squash

Every year i try to grow something we have never grown before, a few yrs ago it was Tomatillo, which are wonderful and versatile. I have made relishes, salsas and gorgeous jams and sauces from them. They do reseed like crazy, so wherever you plant them they will be there forever! This year I ran across a variety of squash that I had never even heard of. I had assumed that the Cucutz was a hybrid, cross between a cucumber and zucchini, but it is an Italian squash, also known as Cucuzza and Gagootz squash. I find it interesting to watch new things grow.

Holy Egg!

Yesterday morning when I gathered the eggs from our ducks I was surprised to find a monstrous egg. I pity the little gal who had to pass this one, I was lookin around for one holdin her butt! All of our critters are fed a gorgeous NON GMO diet. We are not a factory, they get sunshine on them, live the way any animal should. Raised in small flocks. Both chicken and duck eggs, as well as meat (and turkey and goose) available.

Behaving as if the God in all life matters. June 17 2016

A few years ago I read a book entitled Behaving as if the God in all life matters.  It is an old book, can't remember the author, its sometimes a little bit"out there" but the main feeling is true. What the hell is going on in the world? Is there no regard for life, irregardles of religion, race, gender, or sexual orientation. With the recent violence all over the news I have just been upset and not myself.  I have been so busy the last while am behind in gardening, it seemed as though shortly after my fingers dug into the soil, my stress level seemed to release. Similar to when I am with my horses.  The God, the loving, merciful god that I know, would never want mass murders, just love, fruitfullness and growth.

Korean BBQ Duck

I am really going to have to keep track of what I do, so that I can accurately share recipes.  I use a pinch or sprinkle of spice, and rarely keep track of the cooking time... I will try to improve!

This duck I put in roasting pan and put about an inch of water in. Seasoned with salt, pepper and garlic. Part way, about an hour, cooking at approx 350, I put in potatoes, but yams, carrots or whatever your preferred veggie and drizzle everything with sesame oil. Approx 1/2 hr later I put some of VH Korean BBQ sauce on the duck and put back in oven for around 15 min. Can use pan juice for gravy, just add a bit of corn starch or chicken gravy mix works great with the flavor. Our duck is not greasy but others may be so watch the amt of fat going into the gravy. It was very yummy, will definitely make this one again.

Our eggs

We don't necessarily have a normal flock of laying hens. Ours are a mismatched bunch of characters, heritage birds, all fed a gorgeous NON GMO diet including kelp and flax for additional omega fatty acids . The egg shells are mostly brown but could be blue from our silkies or white from our polish silver laced. We also have duck eggs availabe, they are lovely and rich, mostly yolk.  If you have never had duck eggs or a farm fresh egg  I encourage you to treat yourselves, they are completely different than those from the grocery store!

Welcome to our farm.

I am excited to start this blog, many of you may know us from our horse rescue. Obviously one of my great loves is horses, another is music ( a good song is a gift) but my love of food, and more importantly, growing our own food is a passion. I wanted to create a separate page for our farms to share info, and our recipes,  we are more than just a rescue.  We also raise gorgeous poultry, all non gmo chicken, duck, turkey and goose. Chicken and duck eggs, and seasonal Veggies when available.  We will also have a variety of quality items for sale, like a yard sale, many new or gently used items. We have planned opening our store this coming weekend. I will post pics of items avail in store.
